Dill and Cucumber Salmon

With a nice chunk of salmon you will be getting a power pack of protein and Omega 3’s. The blend of dill and cucumber really makes this dish pop.

Ingredients:

Get a BIG salmon fillet – about 2 lbs
1 cucumber – large
1 large tomato
1 avocado – medium
1/2 tablespoon fresh honey
1 tablespoon Dijon mustard
chives
garlic – three cloves
Fresh dill
3 Tbs lemon juice – fresh
1 tablespoon x-tra virgin olive oil
salt
pepper

Preparation:

Cut salmon into 4 pieces. Make sure the bones are all out.
Peal cucumber and cut down the length. remove the seeds and chop into cubes
Chop Tomato and remove seeds
Chop avocado
Press Garlic
finely chop 2 Tbs of chives
Coarsely chop 2 tablespoons dill

Preheat a heavy skillet over medium heat.
Toss the cucumber, avocado, and tomato with the garlic, dill and chives.
Lightly whisk together olive oil and 2 Tbs of lemon juice.
With the other Tbs of the lemon juice – rub the salmon and sprinkle lightly with salt and pepper
Mix the mustard and honey together
Cook the Salmon for about two minutes on each side.
Pour the honey mustard over the top and spread.
Allow to cook for another two minutes.
Serve hot salmon with cold cucumber salad
